Snap Peas And Small Potatoes With Brown Butter Sauce

A fresh tasting side dish that will put some zing into a everyday meal. The brown butter sauce has a light lime flavor that brightens up the flavor of the vegetables. Do not limit this sauce to just this combination but it will dress up other vegetable dishes.  Right now snap peas are in the produce section of the grocery store.  Also available is small new potatoes and fingerlings potatoes that can be a nice change to mashed or baked potatoes.

Brown Butter and Lime Sauce 

  • 3 tablespoons butter (use only butter)
  • 3 tablespoons water
  • 1 teaspoon lime juice
  • 1/2 teaspoon granulated chicken bouillon
  • 1 teaspoon of freeze dried chives or finely sliced green onion.
  • pinch of pepper

In a small sauce pan over medium heat, cook the butter until it is light brown.  Add water, lime juice and chicken bouillon and bring to a boil. Remove from heat and add chives and pepper.  Pour over cooked vegetables.

Snap Peas and Sliced Little Potatoes

Sliced potatoes with the skins on about 1/4 inch thick. In a sauce pan cover potato slices with salted water.  Cook until almost tender. Then add snap peas and cook 5 minutes more. Potatoes should be tender and peas still a little crisp.  Drain and pour brown butter sauce over the vegetables and serve warm.
