Steamed Ribbon Squash

A fun way to make a lovely side dish that will dress up a special meal.  You simple slice yellow squash or zucchini length wise using a vegetable peeler. Hold the squash and slice away from you making thin slices. Lightly salt them before putting them into a steamer basket.

Bring a couple of inches of water to boil and place the basket in the water but make sure the water is not over the bottom of the basket and cover. Steam for 3 to 5 minutes depending on how much you are steaming. Just long enough to make them tender. Keep a close watch because you don’t want to over cook them because they will be too soft to look nice. Serve immediately with a little salt and pepper.

Using both yellow and zucchini squash makes a very attractive dish for special occasion meals.
