Simple easy salad for any time of the year. You can make this with any greens you have and any mild cheese. I used a pastry wheel to cut the slice of cheese into wedges. I sometimes see this salad pictured with the tomatoes stacked up with the cheese between them on a bed of greens. But this way, the dressing and chopped green onions can be drizzled all over the whole salad. The dressing is an easy Italian vinaigrette. I like to make this dressing in the blender and it only takes seconds.
This salad make a nice quick lunch served with crusty bread or toast.
- 3 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon prepared mustard
- 1 small clove of garlic
- 1 slice of onion
- 1/4 teaspoon pepper
- 1/4 teaspoon salt
- 1/2 teaspoon Italian herb seasoning
Place in food blender and blend until creamy.
- Tomato sliced
- Crisp bacon
- chopped green onion
- provolone cheese cut in wedges
- baby arugula
For each salad plate place 3 tomato slices and one slice of cheese cut in equal wedges. Add arugula enough to fill the plate and sprinkle with green onion. Then place crumbled bacon on top. Dress with vinaigrette just before serving. The salad plates can be made up early and placed in the refrigerator until serving.
