Walnut Applesauce Bread

A wonderful moist quick bread that is full of walnuts and cranrasines and topped with brown sugar walnuts. I was astonished at how good the recipe turned out when I made it the first time. This quick bread makes a wonderful gift or to share with a friend. The recipe makes one standard loaf or four mini loafs.

This quick bread freezes well up to two months. So it is great to make ahead for the holidays and have ready for gifts or holiday parties.

Walnut Applesauce Quick Bread

Ingredients:

  • 1/2 cup walnuts pieces
  • 1/4 cup brown sugar packed
  • 2 tablespoons butter
  • 1 1/4 cup applesauce
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 large eggs
  • 3 tablespoons milk
  • 2 cups flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • 1/4 cup dried cranberries
  • 3/4 cup rough chopped walnuts

Directions:

Preheat oven 350 degrees. Prepare standard loaf pan or 4 mini loaf pans with baking vegetable spray.

In a small skillet melt butter over medium hear. Add brown sugar and stir until bubbly. Add walnut pieces and stir until coated and nuts are fragrant. Remove from heat and cool.

In a large mixing bowl on low speed mix, applesauce, oil, sugar, eggs, and milk until blended. In a small bowl whisk together flour, baking powder, baking soda, salt and pumpkin pie spice. On slow speed gradually add flour mixture to applesauce mixture. Beat for one minute. Add chopped walnuts and dried cranberries.

Pour into a prepared 5 inch by 8 inch loaf pan or divide between four mini loaf pans. Sprinkle candied walnuts on top of batter. Bake at 350 degrees. 50-60 minutes for standard loaf and 35-40 minutes for mini pans until tester comes out clean. Cool for 10 minutes before removing from pan.

You may also like this recipe also. Just use drained can peaches instead of fresh peaches. It makes a nice pair to the above recipe.

      The original recipe called for pecans. The food bank gave me shelled walnuts this past summer and I tucked them away in the freezer to use this Holliday season. Now I am on a search for special recipes for those nuts. Thanks for stopping in.
