Walnut Peach Quick Bread

A way to use up fresh peaches before they spoil.  The recipe makes 3 small loaves from 3 peaches and is simple to make from ingredients that is in your cupboard.  The walnuts are optional if you don’t have any.  Perfect recipe when you are cooking for a small family or just your self. It freezes nicely for up to 2 months but it never stays in the freezer very long here because it is so good.

Walnut Peach Quick Bread

Ingredients:

  • 1 1/2 cup chopped peaches
  • 1/2 cup margarine, soften
  • 1/2 cup sugar
  • 1/3 cup brown sugar packed
  • 2 eggs
  • 2 tablespoons honey
  • 1 teaspoon vanilla
  • 1/2 cup milk
  • 1 3/4 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup walnuts

Directions:

Preheat oven 350 degrees. Prepare 3 mini loaf pans 5 3/4 inch x 3 inch x 2 inch with baking spray.  Your little loaf pans can be about the same size.  They don’t seem to be a standard size.

Peel and chop 3 peaches to make about 1 1/2 cups.  You can go over a little.  Set aside

Cream margarine, sugar, and brown sugar together in a mixing bowl until blended.  Add eggs one at a time beating after each one.  Add honey, vanilla and milk and mix until blended .

In a bowl mix dry ingredients with a whisk.  On slow speed gradually mix flour into the wet mixture.  Stir in peaches and nuts.

Pour into prepared mini pans equally.  Bake at 350 degrees for 45-50 minutes or until a tester comes out clean.  Cool for 10 minutes and turn out of pans to finish cooling.  Serve when cool.

      I gave one of the loafs to a friend yesterday and she would not let anyone else have any because she wanted for her breakfast this morning after she tasted it. It is a little sweeter then the peanut butter bread. It is moist and the peach flavor come out. Thanks for your comment. I am glad you liked the peanut butter bread.
