Chilled Cucumber Salad

 

My mother always had cucumbers in her garden. She would not plant them until June in little mounds of dirt.  Then we would eat cucumbers everyday in late summer thru fall.  Of coarse she would can different kinds of pickles to eat all year. She would make this simple salad and put it in the refrigerator in the afternoon for our supper. It is an easy salad and it only takes four ingredients and a few minutes to make. It complements any type of meal. Great recipe when you are out of ideas and low on money.

Chilled Cucumber Salad

  • Servings: 4-6 servings

Chilled Cucumber Salad  

1 Cucumber peeled and sliced

1/4 onion sliced into rings

1/4 cup vinegar

1/4 cup sugar

salt and pepper to taste

Layer cucumbers and onion rings in a bowel. Lightly salt and pepper cucumbers with onions. Mix vinegar and sugar in a bowel and pour over and cover salad. Chill at least two hour before serving.

      It has only 4 ingredients in it. This is a heirloom recipe that you see in old 19th century cook books before there was bottled salad dressings. The only difference now is that we can chill it first for a cool salad on a hot summer day.

      You are welcome. I am always looking for simple and good recipes that can be made on a low budget. I remember the little bowels of mayonnaise being put on the table to add to a salad plate. I sometimes see this in pictures of food in depression cook books. Today we seem to grab our plates of food and run.

      I think modern advertisers of new food products have moved us away from cooking with simple basic ingredients. Going back and finding these old recipes has become popular because we have forgotten about basic good food. Thanks for your comment.

  4. Yum! My mom used to make something similar as well as sweet pickles. I don’t have the recipe for either but I bet this is like the one she did. Easy and great for summer cookouts 😊

      Mom’s should put together recipes for their kids in a recipe box or note book. Even if the kids don’t seem to want them. I have been doing this for my grand kids. Thanks for taking the time to comment. You will like this simple recipe.
