Shake and Scramble Eggs Breakfast for Two

I have been making scrambled eggs this way for many years.  It is quick and easy to do.  You just need a container with a tight fitting lid.  A glass jar with a screw top lid works well.  In the early morning hours and in a hurry to get out the door, you don’t want to drag out your kitchen equipment.  Normally we are not making a large breakfast for a family and you just want a quick breakfast sandwich and coffee.  .  It is a technique you can even use for just plain scrambled eggs.  Save a jar with a screw on lid that doesn’t leak to use for this.  Some plastic containers also have tight lids that can be used.  I favor a jar for this because it shakes up nice and that was the container of choice before there was plastic containers. 


This is my go to recipe for a quick breakfast and you can make your favorite combo for scrambled eggs. Just break the eggs into the container add milk and stir with a fork to break up the eggs.  Add other ingredients you desire and shake.  Melt some butter in a small skillet and put some bread in the toaster.  When the skillet is hot, pour the egg mixture in and scramble.  It just takes a few minutes for the eggs to set, by that time the toast will be ready.   I keep chopped sweet peppers in the freezer to have on hand and easy to grab and add to eggs.  Any favorite cheese and cooked smoked meat can also make a nice addition to the scramble.  English muffins make a great breakfast sandwich.  Warm in the toaster or microwave for a few seconds.


Shake and Scramble Eggs Breakfast for Two

  • Servings: 2 servings

Ingredients:

  • 4 eggs
  • 1/2 cup milk
  • 1/2 cup chopped red and green sweet peppers
  • 1/2 cup shredded cheese
  • 1/2 cup chopped deli ham slices
  • 1/4 teaspoon salt
  • dash of pepper
  • 2 English muffins
  • 2 tablespoons butter or margarine

Directions;

In a container with a tight fitting lid, break eggs into and add milk.  Beat for a few seconds with a fork to break up the eggs.  Add other ingredients and shake until well mixed.  Melt butter in a small skillet on medium heat and put English muffins in toaster.  As soon as butter is melted pour egg mixture in and scramble.  It just takes a couple of minutes for eggs to set.  Fill English muffins with the scramble to make a sandwich.

      Taking food pictures is harder then it looks. You take them from all angles and over head in hopes to get a nice yummy one. Then comes the editing of color and clarity. After that come the optimizing so half the pixels are removed so the picture doesn’t take as much wordpress storage space. The picture is suppose to tell a story but I don’t always get that in the picture.
