Very quick meal that can be made for as little as one person or a crowd. As the pasta is cooking, the bacon and onion can be sauté in a skillet. Crumble the bacon add the cooked pasta to the skillet then add tomatoes, torn fresh spinach and shredded cheese. Toss and serve. This meal is much lighter then the standard tomato sauce with a fresh taste.
I like to make this with left over cooked spaghetti, which is what I did today. Standing in front of the open refrigerator, it dawned on me that I had everything I needed. In 15 minutes I had lunch.
Pasta with Spinach, Bacon and Cherry Tomatoes
Ingredients:
The recipe is for one serving and can be increased according to how many servings you need.
- 3 ounces of uncooked pasta per person
- 1 slice bacon chopped
- 1 slice onion chopped
- 1 cup fresh baby spinach loosely packed
- 4 cherry tomatoes cut in quarters
- 1/4 cup shredded provolone cheese
- salt and pepper to taste
- croutons and grated parmesan cheese for garnish
Directions:
Cook pasta according to directions for that pasta.
In a skillet large enough to hold the pasta, fry chopped bacon and onion until bacon is crispy. Add pasta to skillet with the bacon and onion. Toss in tomatoes, spinach and shredded cheese. Stir until cheese is melted and pasta coated.
Serve with croutons and grated parmesan cheese.
I probably should just tape this recipe to the fridge door as a reminder to make this. I always have these ingredients on hand. 🙂

Thank you for your comment. I have been known to use left over vegetables in it. Pasta of any type seems to work with this sauté.
