Pizzelles

These traditional Italian cookies are delicate and have a light anise flavoring.  Many of us remember them as holiday cookies or cookies that graced the cookie table at a wedding.  I remember spending hours helping to make these with family members using the traditional pizzelles irons.  That was a long time ago and now we have electric pizzelle makers that makes them easy to make.

The recipe I have used margarine instead of butter.  My pizzelle maker recipe calls for butter and states no substitute.  Butter is nearly $4 a pound in my area and I pulled my old recipe out to give it a try with my electric pizzelle maker.  I have a softer cookie and not as much weeping while it is baking from the batter.  I am pleased with them.  The good part beside the delicate cookie is the batch of cookies was more affordable to make.  I can make them anytime and not just for special occasions.

Pizzelles

  • Servings: 35 servings

Ingredients:

  • 1 cup sugar
  • 3/4 cup margarine or butter melted
  • 4 eggs
  • 1 tablespoon anise or other extract flavors
  • 2 cups flour

Directions: 

Melt margarine and let cool.  In a mixing bowel add sugar, cooled butter and anise flavoring.  Mix on slow speed until blended.  Add egg one at a time while mixing on slow speed. Slowly add flour until the batter comes together.  The batter will be thin enough to drop tablespoonful on a heated pizzelle maker.  Follow the directions on your maker because the size of cookie is not standard. Remove from baker and place on a tray to cool.  Makes about 36 cookies.
