Budget friendly casserole for when you are out of ideas and money. An easy dish to make from rice, canned crushed tomatoes and bacon or ham. It can be served as a side dish or the main coarse. I have made this on the top of the stove when I didn’t want to wait for it to bake. Also have made this using different kinds of sausage or canned tomatoes that I had on hand. It is really a budget friendly and versatile dish.
Savanna Red Rice
- 1/4 pound bacon or ham chopped
- 1/2 onion chopped
- 1 rib celery chopped
- 1/2 cup green pepper chopped
- 2 cups uncooked rice
- 2 cans (15 ounces ) crushed tomatoes
- 1 teaspoon dried parsley
- 2 teaspoons salt
- 1/4 teaspoon ground black pepper
- 1 teaspoon sugar
- dash of hot sauce to taste
Preheat oven 350 degrees. Grease a 2 quart casserole.
In a large skillet fry bacon until crisp, remove from skillet. In the skillet with bacon fat sauté onion, green pepper and celery until tender. Add rice, tomatoes, and seasonings and simmer for 10 minutes. Rice will not be completely cooked. Stir in crumbled bacon or chopped ham.
Pour into greased 2 quart casserole. Bake at 350 degrees for 1 hour. Can be served as a main dish or as a side.
