This recipe uses instant potato flakes and rapid rise yeast. It takes about a hour and half to make this bread sticks recipe, from start to finish. You mix, knead and shape them before you set them aside to rise. It only took 30 minutes in a warm place when I made these. It really depends on your environment as to how long it tales and the type of yeast. Brush them with melted butter and top with your favorite bread topping before baking. I chose a garlic and herb spice because I was serving pasta and meat balls. They only took 10 minutes to bake.
I like this recipe because it is easy. My mixer does all the work. The dough hook does all the kneading. I also had to add a couple of tablespoons of extra water to get the right consistency for kneading. That depends on your flour and how dry it is or the type of potato flakes. It is a worry free and forgiving recipe. These bread sticks are a good recipe for a inexperienced bread maker. If you don’t have rapid rise yeast it will take longer to rise. Only one rise is needed so it is perfect to make on a busy day.
My family likes soft bread sticks better then the crunchy thin ones. Soft bread sticks makes a nice change from garlic bread loaf.
Soft Potato Bread Sticks
- 1 package instant dry yeast
- 3/4 cup warm water (110 – 115 degrees)
- 3 tablespoons instant mashed potato flakes
- 3 tablespoons melted butter
- 1 tablespoon sugar
- 1/4 teaspoon salt
- 2 1/4 cups of all purpose flour
- 1 tablespoon melted butter
- toppings (garlic powder, poppy seeds, coarse salt, sesame seeds or herbs) optional
In a large mixing bowl, dissolve yeast in water. Let it sit for 5 minutes to active the yeast. Add butter, sugar and salt and mix. Using the paddle attachment to mixer on slow speed add half of the flour and mix until blended. Change to dough hook and on slow speed add the rest of the flour. When blended increase speed and knead for 5 minutes.
If mixing by hand stir in flour. Turn out onto a floured surface and knead for 5 to 8 minutes until dough is elastic.
Divide dough into 12 even pieces. Roll into 6 inch logs. Place on a greased baking sheet 2 inches apart. Brush with melted butter. Cover with plastic wrap the has been sprayed with vegetable cooking spray. This will keep the bread sticks from sticking to the plastic wrap. Let rise in a warm place for 30 or more minutes.
Preheat oven at 375 degrees. Top bread sticks with melted butter and optional toppings. Bake for 10 to 12 minutes on center rack in the oven. Remove from pan and serve.
