Applesauce Spice Bars

A tender moist bar cookie that is lightly spiced and sweeten. The bar cookies are easy to make from applesauce, raisins and nuts with only one egg. This bar cookie has been my family’s favorite since the 1970’s. The recipe came from McCall’s Magazine and included in some of their cook books during that decade. The recipe is inexpensive to make when you leave out the nuts. I have even left out the raisins when I didn’t have any. This time I put cranraisins in place of regular raisins. It makes the house smell wonderful with a apple and spice.

The recipe is baked on a jelly roll pan. When I first started making these I didn’t have a jelly roll pan and used a 9 inch by 13 inch cake pan, which made thicker squares. I like to place parchment paper on the bottom of the jelly roll pan so the bars are easily removed after they are cut. The recipe is quick to make because you just spread the thick batter on the jelly roll pan to bake. You didn’t have to drop dough by the spoon to form cookies dirtying up several cookie sheets. While the pan was baking for 25 minutes was just enough time to wash up the mixing bowl and utensils. I always cut them in triangles and dust the bars with powder sugar.

Applesauce Spice Bars

  • 1/2 cup soft margarine or butter (1 stick)
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/2 cup applesauce
  • 2 cups all purpose flour
  • 2 teaspoons baking soda
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon nutmeg
  • 1 cup chopped walnuts
  • 1 cup raisins
  • Confectioners’ sugar


Preheat oven 350 degrees. Lightly grease or use vegetable spray 10 1/2 inch by 15 1/2 inches by 1 inch jelly roll pan.

Cream margarine, sugar, and egg together until light and fluffy. Add vanilla and applesauce mix until blended. Sift flour baking soda, cinnamon , cloves, and nutmeg together. While mixer is on slow speed add flour mixture a little at a time until all of it is blended in. Stir in nuts and raisins.

Pour into prepared jelly roll pan and spread evenly. Bake at 350 degrees for 25 minutes until the top springs back when is lightly touched. Cool in pan and dust with Confectioners’ sugar and cut into bars.

      I like raisins and nuts. I even put them in fudge. I only had cranraisins this time. The food pantry has been very generous this past year with walnuts and dried cranberries. Thanks for your comment.
