Baked Moist Chicken Breast

This recipe came off the back of a mayonnaise jar that I tried years ago. It made the best moist baked chicken breasts with a wonderful breading. It is a nice change from crunchy chicken nugget type of crust.

Coating the chicken breasts with mayonnaise is the secret to this wonderfully moist baked chicken. Also I used day old home made bread for the fresh bread crumbs. I didn’t put them in a processor but crumbled the bread by hand. This made lovely soft crumbs.

This recipe is for three servings but can be adapted for as many servings needed. Ideal for cooking for one or two servings. It is so good that you don’t mind eating as left overs.

Baked Moist Chicken Breast

  • Servings: 3 servings

Ingredients:

  • 3 boneless chicken breasts
  • salt and pepper
  • 1/2 cup mayonnaise
  • 1 cup fresh bread crumbs
  • 1 teaspoon dried parsley
  • 1/2 teaspoon season salt
  • 1/4 teaspoon sage
  • 1/2 teaspoon Italian seasoning
  • 1/2 cup grated parmesan cheese

Directions:

Preheat oven 350 degrees. Prepare baking pan with vegetable spray.

Season the chicken with salt and pepper. Mix bread crumbs with salt, sage, and Italian seasoning . Cover both sides of the chicken with mayonnaise, then dip into seasoned crumbs.

Place on baking pan and repeat until all 4 are on the baking pan. Sprinkle with parmesan cheese. Cover and bake for 30 minutes at 350 degrees. Remove lid and return to oven and continue for 10 more minutes to brown the bread crumbs. Serve immediate

      I always use the left over homemade bread as bread crumbs or dried it for use. I think it gives better results then bread from the store. .
