Baked Moist Chicken Breast

This recipe came off the back of a mayonnaise jar that I tried years ago. It made the best moist baked chicken breasts with a wonderful breading. It is a nice change from crunchy chicken nugget type of crust.

Coating the chicken breasts with mayonnaise is the secret to this wonderfully moist baked chicken. Also I used day old home made bread for the fresh bread crumbs. I didn’t put them in a processor but crumbled the bread by hand. This made lovely soft crumbs.

This recipe is for three servings but can be adapted for as many servings needed. Ideal for cooking for one or two servings. It is so good that you don’t mind eating as left overs.

Looks delicious; and there’s a lot to be said for using home-made bread crumbs.

I always use the left over homemade bread as bread crumbs or dried it for use. I think it gives better results then bread from the store. .

That was one of the ways we used to get them before the internet. I think we are all better cooks now because of the internet. Thanks for stopping in.
