Easy weekday meal, that is quick even made from scratch. It only takes 30 minutes to simmer while the rotini can be cooking. It only take 15 minutes prep time. Kids love this with the flavor sausage.
Just chop a few vegetables for flavoring to the sauce. I include carrots because they have a nice sweetness and it adds more nutrition to the sauce. Also I keep chopped sweet peppers in my freezer to use in cooking. Watch for them on sale and just two or three of them can fill a baggy that can be quickly add to a dish.
An other item that can be kept on hand is dried chopped onions. You will find them in discount stores in the spice isle inexpensive compared to fresh onion. I usually find them for a dollar a spice container. I also look for other spices in discount stores. Bulk stores are ideal too for finding spices at a low cost. I have a organic grocery that sales bulk spices near me. I just buy what I will use in a few months that way my spice rack stays fresh.
Rotini and Sweet Italian Sausage
- 1 1/2 pounds bulk sweet Italian sausage
- 1/2 medium sweet onion chopped or 2 tablespoons dried chopped onion
- 1 rib celery chopped
- 1/2 cup chopped sweet pepper red or green
- 2 medium carrots cut in small pieces
- I clove garlic minced
- 1 (15 ounce ) can tomato sauce
- 1 (15 ounce) can petit tomatoes or chopped tomatoes
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1 teaspoon dried parsley
- salt and pepper to taste
- Rotini pasta
In a large skillet brown sausage with onion, celery, sweet pepper, garlic, and carrots. When sausage is brown add tomato sauce, petit tomatoes, and spices. Simmer for 30 minutes, stirring occasionally to prevent sticking.
Cook rotini according to the directions on the box. Drain
Serve the meat sauce over rotini immediately.
