A wonderful rice side dish that can be made from left over rice. Very quick and easy to make. When you are out of ideas on how to serve rice this is a great dish. I used seedless red grapes and slivered almonds. The rice is sautéed in butter with chicken soup base and slivered almonds. The grapes are added just before serving.
Rice with Grapes
Ingredients:
- 2 cups cooked rice
- 2 tablespoons butter
- 1/4 cup chopped green onions or 2 tablespoons dried chives
- 2 tablespoons slivered almonds
- 1 tablespoon chicken soup base
- 1 cup halved seedless grapes
- 1 teaspoon fresh parsley
Directions:
In a large skillet melt butte on medium heat and add rice, almonds, green onions and soup base. Sauté until rice is hot. Add grapes and stir for a minute until grapes are warm. Serve immediately with a sprinkle of parsley.
That’s a nice twist on leftover rice.
