Cinnamon Apple Coffee Cake from Biscuit Baking Mix

Time for another great recipe using biscuit baking mix. This is an old favorite recipe that came off of the back of commercial biscuit mix when I was a kid. I kept the recipe because I was the one who would make it when mom had some biscuit mix in the cupboard. Every one loved it especially in the winter when I could use mom’s canned apples. We had a couple of apple trees and mom always canned as many quarts of apples that she could get off those trees. They went into pies and other desserts.

I canned 5 quarts of apples last week and one quart didn’t seal. I didn’t want to reprocess the jar because it would turn the apples too soft. A little bird told me to find that old recipe and make a coffee cake to use that quart of canned apples. I would also have a new recipe to post using the baking mix I have posted. It is a delicious coffee cake. Making it from your own mix, makes it easy.

The original recipe only calls for one or two apples to make this coffee cake.

Cinnamon Apple Coffee Cake from Biscuit Baking Mix

Ingredients:

Cake

2 cups biscuit mix

2/3 cup water

1 egg

2 tablespoons sugar

Topping

1 or 2 apples peeled and sliced

1/2 cup brown sugar packed

1/2 cup biscuit mix

3/4 teaspoon ground cinnamon

5 tablespoons cold butter or margarine sliced

Directions:

Preheat oven 400 degrees. Prepare a 8 inch square baking pan or a 9 inch spring form pan with vegetable spray.

Mix together cake ingredients by hand. The batter will be a little lumpy but that is what you want. Spread 2/3 of the batter in prepared baking pan. The rest you will drop on top of the topping. Lay apple slices on top of batter.

Mix brown sugar, biscuit mix and cinnamon together. Sprinkle half mixture on top of the cake . Drop rest of the batter by spoonful on top of apples and cinnamon mixture. Now sprinkle the rest of the cinnamon mixture on top. Add slices of butter all over the top of the cake.

Bake at 400 degrees for 25 minutes until a tester comes out clean from the center. Serve warm or cold.

      If you don’t want to make your own mix like I do, you can use Bisquick. I just posted flour tortillas recipe using biscuit mix. Also congratulations on the 5000 followers.
