Refreshing salad to make when you are out of ideas. Summertime treat perfect for just a couple of servings or to make for a crowd. It is a simple combination of grated carrots and cabbage . The dressing is a oriental ginger mayonnaise that really gives it fresh taste. The extra dressing can be stored up to two weeks in the refrigerator. You can use the dressing on any salad but I like it on cucumbers.
Carrot and Cabbage Slaw with Ginger Mayonnaise
Ingredients:
- 1/2 cup mayonnaise
- 6 tablespoons honey
- 3 tablespoons apple cider vinegar
- 3 teaspoons yellow mustard
- 1/4 teaspoon oil
- 1/8 teaspoon ground ginger
- 1/8 teaspoon salt
- 3 cups shredded cabbage
- 1 1/2 cups grated carrotes
- 2/3 cups dried cranberries
Directions:
Mix in a blender mayonnaise, honey, vinegar, mustard, ginger and salt until creamy and smooth.
In a large salad bowl toss together cabbage, carrots and dried cranberries. Pour half of the ginger mayonnaise dressing over slaw. Use more if needed. The left over dressing will keep in the refrigerator up to two weeks in a air tight container.
Sounds like a great twist on slaw, I’m sure the ginger gives it a lovely zing!
