Carrot and Cabbage Slaw with Ginger Mayonnaise

Refreshing salad to make when you are out of ideas. Summertime treat perfect for just a couple of servings or to make for a crowd. It is a simple combination of grated carrots and cabbage . The dressing is a oriental ginger mayonnaise that really gives it fresh taste. The extra dressing can be stored up to two weeks in the refrigerator. You can use the dressing on any salad but I like it on cucumbers.

It is a great contrast to barbeque ribs or chicken. Thanks for your comment.

Thanks for stopping in. It has a hint of Asian flavor like those chopped salads kits.
