This is an old recipe I got from my mother. We had home grown strawberries growing up. So this recipe was her go to recipe for short cake during strawberry season. It mixes together very quick and bakes in a short time. The ingredients are simple and you don’t need to be a baker to make this.
I have been very busy the last few months and have not had much time to bake. Right now is strawberry season in my area so the strawberries are just lovely. It has been a long time since I have made my mom’s recipe and when I stumbled across it, I knew it was time to make it. All she ever did was dump all the ingredients into a mixing bowl and beat with a hand mixer. No sifting and no creaming, just mix it up. Then spread it in a greased pan and bake. It always turn out nice which was unusual for her baking skills. It was always served split in half with strawberries in between the two pieces and milk poured over it. On special occasions we would have whipped cream to top it.
Quick and Easy Short Cake
Ingredients:
- 1 1/2 cups flour
- 2 teaspoons baking powder
- 1 cup sugar
- 2 tablespoons shortening
- 1/2 cup milk
- 1 egg
- 1 teaspoon vanilla
Directions:
Preheat oven 350 degrees. Prepare 8 inch by 8 inch square baking pan with vegetable spray.
In a mixing bowl, add all ingredients. Mix with a hand mixer until blended. Pour into square baking pan that is prepared with vegetable spray or greased with shortening.
Bake at 350 degrees for 25 minutes or until tester come out clean. Serve with fruit, milk and whipped topping.

This recipe is made from items that is always in the pantry. If you don’t have shortening you can use butter or margarine. My mother was the product of the depression and shortening was the go to fat in baking.
