Small Family Meat Loaf

An easy meat loaf that only takes 1 pound of lean ground beef.  It only takes 1 hour and 15 minutes to bake.  It will serve four to five servings, just right for a small family.  In my case there is a enough left over for a couple of sandwiches the next day.  

I baked the meat loaf in a vintage loaf pan that is 7 inches by 3 inches.  

Small Family Meat Loaf

Ingredients:

  • 1 pound ground lean beef
  • 1/2 cup rolled oats
  • 1/3 cup chopped onion
  • 1/4 cup milk
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 egg
  • 1 teaspoon prepared mustard
  • 1/2 teaspoon parsley
  • 1 teaspoon Worcestershire sauce
  • ketchup and red sweet pepper rings

Directions:

Preheat oven 350 degrees.  

Mix ground beef, rolled oats and onions in a medium bowl.  In a small bowl whisk the rest of the ingredients until blended.  Pour wet mixture over the ground beef.  Mix and form into a loaf or place in a small loaf pan.  Top with ketchup and sweet red pepper rings.  Bake at 350 degrees for 1 hour 15 minutes or until done.

    Oooo yay a meatloaf recipe! Believe it or not, meatloaf is my favorite dinner meal that my mom makes. She always makes it for me when I’m home from college. I’m always down to try new recipes, so I’ll have to tell her about this one 😉

      Mom’s meat loaf always tastes better then anyone’s else’s. When you are home during Christmas break you should ask her to start you a recipe box with dishes that she makes which is your favorite. When you get my age those recipe cards in her handwriting will a very special treasure. Hit up all your relatives too with 6 by 4 index cards for their best recipes.

      It is a real basic recipe so spice it up the way you like it. I just posted a picture of the small loaf pan I used that was my mom’s in the Prune bread recipe. Thanks for your comment.
