Honey Cucumber and Tomato Salad

Just a refreshing anytime salad that is quick and easy to make.  The secret to it is rice vinegar.  The cucumbers I used was end of the season large and full of seeds.  I seeded them and peeled them.  You can slice them the way you want. Add tomatoes cut in wedges and thinly sliced sweet onion.  I like to make the dressing and put my sliced onions in first and let them marinate for an hour.  Add cucumbers, tomatoes and parsley when ready to serve.

Honey Cucumber and Tomato Salad

Ingredients:

  • 3 tablespoons rice vinegar
  • 1 tablespoon vegetable oil
  • 2 teaspoons honey
  • 1/2 teaspoon salt or to taste
  • 1 small onion sliced thinly
  •  1 large cucumber
  • tomato wedges
  • 1 tablespoon chopped fresh parsley
  • dash of black pepper

Directions:

In a bowl whisk rice vinegar, oil, honey and salt until blended.  Add thinly sliced onions and chill for an hour.

Cut cucumber in half and remove seeds.  Slice cucumbers in 1/2 pieces.  Slice tomatoes in wedges enough for the number of servings needed.  Add to dressing and onions. Toss with chopped fresh parsley and a dash of pepper.  Serve.

      I had some cucumbers that needed to be used up. I looked for a recipe that was different and found this one. It turned out really good.
