Shepherd’s Pie for 2

Easy dinner for just a couple of people.  It only takes 1/2 pound of ground beef.  This is perfect for left over vegetables or mixed frozen vegetables.  Add a salad or a dish of applesauce to complete the meal.  Cooking a hardy meal can be done even for just one or two people.

Shepherd's Pie for Two

Ingredients for meat filling:

  • 1/2 pound ground beef
  • 1/4 cup chopped onion
  • 1/2 cup chopped celery
  • 1 1/2 cups frozen mixed vegetables
  • 3/4 cup water
  • 3 tablespoons flour
  • 1/4 cup water
  • salt and pepper to taste

Directions:

Brown ground meat with onion and celery.  Add vegetables and water.  Simmer for 10 minutes. Mix flour with water enough to make a gravy past.  Add to vegetables cook until thickened.  Add water if needed.  Season with salt and pepper to taste.  Pour into a small casserole and top with mashed potatoes.

Mashed potato topping:

  • 2 medium potato peeled and cut in pieces
  • 1 tablespoon butter
  • 3 tablespoon milk
  • salt to taste

Boil potatoes for about 15 minutes in enough water to cover them until tender.  Drain then add butter, milk and salt.  Spread on top of beef and vegetable mixture in the casserole.  Bake at 350 degrees for 30 minutes until bubbly and little brown on top.

      It is a baking pan that I have had for at least a decade. Nordic ware has an updated version this year. I know I must of bought mine after fall season was over with a deep discount because I did that to add to my collection of baking molds.. That was corn meal muffin mix I used for that.   4. In my book, Shepherd’s pie is one of the all-time greatest foods, especially with a mashed potato crust! I make it with ground turkey, and sometimes completely vegetarian with sautéed mushrooms and onions. I love the little cornmeal acorn and leaf as well!!!
