Baked Eggplant BLT Sandwich (55)

Looking for something different to make with a large eggplant?  Try it in a sandwich, but not just any sandwich, a BLT with provolone cheese.  You start by slicing the egg plant and baking the slices in the oven.  Large eggplant can be bitter, so you can remove some of the bitterness.  Also eggplant can be like a sponge so baking is better then frying.

You prepare the eggplant by slicing in 1/2 slices.  For a sandwich you will want to slice the large end.  Place the eggplant in a colander and salt each piece.  Let sit for 30 minutes to drain the liquid out of the eggplant.  This removes some of the bitterness from the eggplant.  Rinse off and place on a paper towel. Now you are ready to dredge and bake.

While the slices are baking, get everything ready for the sandwich. Fry your favorite bacon and drain.  When the eggplant is tender and golden brown, build the sandwich while the slices are warm enough to melt the provolone cheese.

Baked Eggplant Slices

  • Eggplant slice in 1/2 inch slices
  • salt
  • 1 egg beaten
  • 1 tablespoon of water
  • flour for dredging
  • seasoned bread crumbs


Preheat oven at 350 degrees.  Prepare cookie sheet with a sheet of foil that is brushed with oil.

Cut eggplant into 1/2 slices. Sprinkle slices on both sides with salt and put into a colander to drain liquid out of the eggplant.  Let sit for 30 minutes.  This removes some of the bitterness from the eggplant. Rinse off the salt and place on a towel to drain.

Beat egg with water in a shallow bowl.  In two other bowls put some flour in one and the other one put the seasoned bread crumbs.  Start by dredging eggplant in flour, then in egg and finally cover with bread crumbs.  Place on a oiled foil on cookie sheet.  Bake at 350 degrees for 30 minutes turning slices over after 20 minutes.  Return to oven and finish baking.  The slices are down when tender and golden brown.  Serve warm.

Great addition to BLT sandwich.  Toast favorite bread and slather on mayonnaise on each slice. Place warm slice of eggplant with a slice of provolone cheese first on one of the slices.  Add tomato slices, bacon and lettuce. Top with a second slice of toasted bread.

      I follow many vegan cooks and they put many things in sandwiches like eggplant. I simply added the bacon. Thanks for your comment.

      Yes, it gives the sandwich a real boost of flavor. Eggplant is rather neutral in flavor so it needs tomatoes and other things to dress it up.
