Black Bean, Corn and Rice Salad

Very light and refreshing  salad made from cold cooked rice, chopped celery, tomato, onion, black beans, corn, chopped sweet red peppers and chopped fresh baby spinach. It is a complete meal in a bowl because the rice and beans together makes a whole protein. With the addition of corn, tomatoes, celery and spinach gives you a balanced meal.  We like it as a side dish.  The dressing is light slightly sweet lemon with parsley.  Quick to make and inexpensive. This attractive colorful dish is perfect for a pot luck and be prepared to be asked for the recipe.

Black Bean, Corn and Rice Salad

Ingredients:

  • 2 cups cold cooked rice
  • 1 (15 ounce ) can black beans (drained and rinsed)
  • 1 cup corn
  • 2 ribs  chopped celery
  • 1/2 cup chopped red sweet pepper
  • 1 cup roughly chopped fresh baby spinach
  • 2 chopped tomatoes
  • 1/4 cup finely chopped onion
  • 1/4 cup lemon juice
  • 1/3 cup vegetable oil
  • 3 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried cilantro or parsley
  • 1/4 pepper
  • 1 teaspoon prepared mustard

Directions:

In a large bowl, combine cold rice, black beans, corn, celery, red sweet pepper, tomato, onion, and spinach.  In a small bowl whisk lemon juice, oil, sugar, salt, sugar, dried cilantro, pepper and prepared mustard until a creamy dressing.  Pour dressing over the rice and black bean salad.  Toss and serve.

      Thanks. You can make it your own and choose a dressing that you love. I change it around sometimes with a new dressing.
