A delicious side dish that can be brought to a picnic, pot luck dinner, party or family get together. It is easy to put together the night before and taste better the next day. It just takes three different cans of different beans and chopped onion. The dressing is just sugar, vinegar, oil and spices.
I had cooked a bag of dried dark kidney beans in my pressure cooker to divide up into packages for my freezer. This way I would have them ready to use for chili. I saved a cup and a half to use in this salad. Every once in a while I get hungry for this simple salad that is one of my favorite.
Three Bean Salad
- 1 (15 ounce) can green beans
- 1 (15 ounce) can yellow wax beans
- 1 (15 ounce) can dark kidney beans
- 1 small onion chopped
- 1/2 cup sugar
- 1/3 cup vinegar
- 1/3 cup oil
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon celery seed
Drain beans and rinse kidney beans. Place in a large bowl and add chopped onion. In a small bowl whisk together sugar, vinegar, oil, salt, pepper, and celery seed. Pour dressing over beans and mix. Cover and place in refrigerator for at least 2 hours or over night. Served chilled.
