Yummy loaf of sweet bread that is easy to make from items that are in your cupboard which stirs up quickly, You will need a jar of peanut butter, sugar, flour, egg, oatmeal, and milk. While it is baking the bread smells so good. Serve warm with butter, favorite jam or cream cheese. The oat meal give the bread a very nice texture.
I have been given many of jars of peanut butter this past spring from the food bank. Try as we might we have not been able to keep up with the weekly gift. I have found several recipes that use peanut butter and will be trying out. This peanut butter oat bread is really good. It is not real sweet like most quick breads. It is a healthy alternative to cookies.
Peanut Butter Oat Quick Bread
Ingredients:
- 1 cup sugar
- 3/4 cup creamy peanut butter or chunky peanut butter
- 1 egg
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 1/2 cup flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 cup quick cooking oat meal
Directions:
Preheat oven at 350 degrees. Prepare loaf pan 9 inch x 5 inch (Standard size bread pan) with baking vegetable spray.
In a large mixing bowl cream peanut butter, sugar, and egg. Add milk and vanilla and mix until blended. Mix baking powder and baking soda with flour together with whisk. Add flour mixture to peanut butter mixture. Mix on slow speed until batter is smooth. Mix in oat meal. Pour into bread pan and bake at 350 degrees for 65 minutes or until a tester comes out clean. Wait for 10 minutes before removing the bread from pan.

It is really a nice bread. It tastes like peanut butter on bread not like a peanut butter cookies. Other recipes I have tried are more cake like but this is just perfect to put a little jelly on. Thanks for trying the recipe. I hope it becomes one of your keeper recipes.

Thanks for your comment. I get many jars from the food bank. I depend on them to help me get through the month as a retiree. I am always on the look out for recipes to use the peanut butter in creative ways. This is an exceptional recipe for peanut butter bread.
