A weeknight meal that is easy to make. Brown rice cooked in chicken broth and topped with turkey meatballs, vegetables and mushroom sauce. You can make the meatballs yourself or purchase them in your frozen food section at the grocery. The vegetables are frozen carrots, cauliflower and broccoli. That sauce base is a can of concentrated mushroom soup. It doesn’t get any easier than this.
Brown Rice Turkey Meatballs Primavera
- 1 cup uncooked brown rice
- 2 cups chicken broth
- 1 pound ground turkey*
- 1/2 cup bread crumbs*
- 1 egg beaten*
- salt and pepper to taste*
- 2 tablespoons oil (for frying)
- 1 can condensed cream of mushroom soup undiluted
- 1 cup water
- salt and pepper
- 1 cup sliced frozen carrots
- 1 cup frozen broccoli
- 1 cup frozen cauliflower
* Note* 1 pound of frozen premade turkey meatballs be used instead of making them.
Cook rice in chicken broth according to directions on the package. Prepare meat balls by mixing ground turkey, bread crumbs, beaten egg and season. Shape into 1 1/2 inch balls. Place oil in skillet and brown meat balls. Braise meatballs in water covering skillet with tight lid for 10 minutes. Add can soup, vegetables and simmer 5 minutes or longer until vegetables are cooked to your taste. Season with salt and pepper. Serve over warm rice.
