Pork with Savory Apple Stuffing

Unstuffed pork chops casserole using regular cut pork chops.  The apple stuffing is made from a stuffing mix or make your own.  Layer the chops on top of the stuffing and top with sweet and sour sauce.  Makes and easy week night meal for a family or just for two.

We like stuffed pork chops but the thick cut chops are always expensive per pound.  I purchase pork chops on sale.  I also like to make stuffing from stale bread or bread that is at the end of it’s shelf life.  During hot humid weather the bread doesn’t keep as long as it should.  I try to bake at night when it is hot so I don’t heat up the house during the hottest time of the day before supper.  This casserole can be made at night and reheated the next day.  I think it taste better the next day. Just transfer it to a platter when it is done cover and chill.

Pork with Savory Apple Stuffing

When making less servings then 4 just use half of a box of stuffing mix or make your own stuffing in the amount you need.

Ingredients:

  • 1 package (6 ounces ) pork flavored stuffing mix
  • 1 can (14 ounces) chicken broth or 1 3/4 cups of water
  • 1 small apple, peeled and chopped
  • 1/4 cup celery chopped
  • 4 pork chops boneless ( I used regular chops with bone)
  • 1/2 cup sweet and sour sauce
  • 1 tablespoon course brown mustard
  • pinch of cayenne pepper (optional)

Directions:

Preheat oven 375 degrees.  Line a 9 inch square glass baking dish with foil and lightly spray with vegetable spray.

Mix stuffing mix with chopped apples and liquid in a bowl.  Spread stuffing on the bottom of lined baking dish.  Top with pork chops.  It is ok if they over lap a little. Combine mustard, sweet and sour sauce and cayenne pepper until smooth and blended.  Spoon the sauce over the pork chops.  Bake at 375 degrees for 45 minutes until chops are done.

      LOL…I had such a difficult time photographing this one. Your comment made me chuckle. The hardest part for me is always the picture taking. I collect cook books and I adapted this from a little book of Amish recipes. We love this recipe. You can put a bottom layer of pork chops and the stuffing layered in the middle with the rest of the chops on top, when you are cooking for a large group. Thanks for your comment. It made me smile.
