Backpack Cookies

These cookies are loaded with special treats such as,  crispy rice cereal, oatmeal, candy coated chocolate pieces (M&Ms), peanuts, coconut, raisins and white chocolate chips. A wonderful chewy cookie that is great for packing in lunches or taking to a family gathering.  You can choose other combinations of dried fruit, nuts and candy pieces.  This recipe makes great gifts to share and easy to make.

I stopped buying cookies because they all seemed to be dry or stale tasting to me.  I bought from different stores and different brands, but they are all like that.  I also noticed that the cookie section in my local grocery stores have gotten smaller. People must not be buying as many cookies and baking more.

Backpack Cookies

  • Servings: 48 servings

Ingredients:

  • 1 cup margarine or butter (2 sticks) soften
  • 1 cup granulated sugar
  • 1 cup brown sugar firmly packed
  • 2 large eggs
  • 1 teaspoon vanilla
  • 2 cups all purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup uncooked oatmeal
  • 2 cups rice crispy cereal
  • 1/2 cup flaked coconut
  • 1 cup chopped peanuts
  • 2 cups candy coated chocolate pieces
  • 1 cup white chocolate chips
  • 1 cup raisins

Directions:

Preheat oven to 350 degrees.  Prepare cookie sheets with parchment or vegetable spray.

Cream margarine, sugar, brown, sugar, eggs, and vanilla in a large mixing bowl on medium speed until fluffy.  In the mean time sift flour, salt, baking soda and baking powder together.  Add dry mixture a third at a time to the creamed mixture beating after each time.  Stir in by hand the rest of the ingredients until blended.   Drop by rounded tablespoonful on cookie sheet 2 inches apart.  The cookies will spread while baking. Bake for 12 to 15 minutes. Cool on cookie rack and store in air tight container.
