Lasagna for two recipe but made with the noodles rolled up into servings. The roll ups is full of Italian flavor of ground meat, cheese and tomato sauce. Just perfect for a dinner for one or two people. You can double this recipe to make more servings. Just multiply the basic recipe to as many servings that is needed.
Lasagna Roll Ups
- 4 cooked lasagna noodles
- 1/4 pound ground beef
- 1/4 pound ground sausage
- 1/4 cup chopped onion
- 1 jar (14 ounce) tomato pasta sauce
- 1/2 cup cottage cheese
- 1 egg white
- 1/2 cup chopped fresh spinach or 1/4 thawed spinach(water squeezed out)
- 1/2 teaspoon oregano
- 1/2 teaspoon basil
- 2 tablespoon Parmesan cheese grated
- 3/4 cup of shredded mozzarella
Cook lasagna noodles long enough to soften but not quite down.
Preheat oven 350 degree. Prepare baking dish or pan with a small amount of sauce on bottom.
In a skillet brown ground sausage, ground beef and onion. Add some sauce, reserving half for topping, to browned meat. Let cool a little.
Mix in a bowel cottage cheese and egg white. Add basil, oregano, spinach, and grated Parmesan cheese.
Lay out lasagna noodles on a tray. Spread meat filling on first. Leave a inch on each ends with out filling. On top add cheese mixture evenly. Roll up and place seam side down in baking dish. Add sauce on top of the four rolls and sprinkle with mozzarella cheese. Cover with foil and bake for 30 minutes.
