I am always looking for a recipe to use my homemade jams. Not only does it foot the bill but it is also very easy and inexpensive. Most groceries use cake mixes as lost leaders often to draw customers. I only buy the mixes when on sale and keep them on hand. There are many dessert recipes that use cake mixes.
I used margarine and lined the baking pan with parchment paper to make the bars easy to remove and cut. I used my cranberry orange jelly for the filling. Any jam or jelly will make these delicious with a buttery crunchy cookie.
Jam Oatmeal Bars
- 1 box yellow cake mix
- 2 1/2 cup quick cooking oatmeal
- 3/4 cup melted butter or margarine
- 1 jar jam any flavor (1 cup)
Preheat oven 375 degrees. Prepare 9 inch by 13 inch baking pan with vegetable spray.
Mix cake mix with oatmeal. Add melted butter and mix until crumbly. Press half of mixture into the bottom of pan. Spread jam evenly on top. Sprinkle rest of the oatmeal mixture on top. Bake in 375 degree oven for 20 minutes until slightly brown on edges and very blond. If you cook them too long then they get too crunchy, you want them to be a little soft. Cool first before cutting into bars.
