Oatmeal Chocolate Cherry Bars

I still have frozen dried cherries in my freezer that needed to be used.  Dried cherries are so good in cookies. This recipe is fast and easy to make.  You don’t need extra baking equipment to make these.  Mix by hand or by a mixer and pour into a 9 inch by 13 inch baking pan to bake these. If you want to make these festive just sprinkle some jimmies or M&M’s on top before baking.  Cool in pan and cut.

My cherries were still hot and the some of the chips melted making the batter chocolate.

Oatmeal Chocolate Cherry Bars

  • Servings: 24 servings

Ingredients:

  • 1/2 cup margarine or butter soften (1 stick)
  • 1/4 cup shortening
  • 1 cup light brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup flour
  • 1 teaspoon baking soda
  •  2 1/2 cups quick cook oatmeal
  • 1 cup dried cherries (soaked)
  • 1 1/2 cup mini chocolate chips

Directions:

Preheat oven 350 degrees.  Prepare 9 inch by 13 inch cake pan with vegetable spray.

Soak 1 cup dried cherries with hot water.  Set aside.

Cream butter, shortening and brown sugar with electric mixer.  Add egg and vanilla continue to mix for 1 minute.  Add flour and baking soda and mix completely.  The batter will be thin.  Add all at once oatmeal and mix completely. Drain cherries, with chocolate chips, stir in by hand into batter.  Pour into prepared 9 inches by 13 inches  Bake at 350 degrees for 30-35 minutes.   Cool and cut.  Store in airtight container.

    Love anything oatmeal and love bar cookies. Just a quick clarification. The oatmeal is the dry, uncooked oats, right? My first quick read I thought it meant to use already cooked oatmeal. Also, I don’t have any cherries. I may try this with Craisins. Thanks for your recipes. I love that I usually have everything you use already in my pantry.

      Thanks I made the correction and took the ed off of cook. Yes it is the dry oatmeal. You can use what you have on hand for the fruit. Raisins would be good too. They won’t be so chocolatey as what is pictured because my cherries were still very hot from me plumping them. If you make these, you will have a oatmeal blondie with chocolate chips and craisins. They are really good. Nice easy Christmas cookie.

      I have another bar cookie that uses oatmeal scheduled to be posted in the morning that you will like also. Straight from the pantry and only 4 ingredients. I have a few other neat cookies to post.
