A wonderful way to start your day or to grab out the door in a hurry. These are delicious to eat anytime. You might not be able to get your kids to eat bran flakes but they will enjoy the muffins. Just don’t tell them you used that cereal.
I have been trying different recipes for bran muffins because. the food bank has been so generous with ban flakes. They try to find healthy food items for their clients. Only I just wasn’t eating it fast enough so I ended up with several boxes that was going stale. An other item they distribute regularly is 15 1/2 ounce cans of unsweetened applesauce. That size of can is equal to 1 1/2 cups of applesauce. Also 3 snack containers is 1 1/2 cups of applesauce, The applesauce made the muffins moist because some recipes for bran muffins turn out dry. The raisins are optional. I just happen to really like raisins and they are a perfect in bran muffins.
This recipe makes 12 muffins. Because they are so good I double the recipe and drizzle a little powder sugar glaze on them.
Applesauce Bran Muffins with Raisins
- 1½ cups applesauce unsweetened
- 1½ cups all-purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 1/2 tsp cinnamon
- ¼ tsp ground nutmeg
- ½ cup sugar
- 2 tbsp margarine, softened
- 2 eggs
- 2 tbsp molasses
- 1½ cups wheat bran flakes cereal
- 1 cup raisins
Preheat oven 350 degrees.
Line 12 cup cake pan with muffin liners or grease 12 muffin pan.
Sift flour, baking powder, baking soda, salt and spices together in a bowl. Set aside.
Using an electric mixer cream margarine, sugar and eggs together. Add molasses and applesauce beat on low speed until blended. Add flour mixture slowly on low speed until all the flour is added, Add bran flakes cereal and beat on medium speed for 2 minutes. Stir in by hand raisins. Spoon into muffin cups. Bake for 28 to 30 minutes until toothpick comes out clean.
