Blueberry Pecan Salad With Poppy Seed Dressing

 

Weather is starting to get warm and cool refreshing summer salads make their way into our meals.  This salad is great because it takes advantage of fresh produce that you can find at the farmer’s markets. This salad has amazing flavors that really awakens your palate and easy to make. It starts with mixed baby greens and blueberries. Then you add some toasted nuts that you have on hand. Next important flavor is onion. Thinly sliced sweet onion or fresh spring green onions gives it a touch of savory. Other mild vegetables like fresh peas or cauliflower can also be added to bulk up it up for a main coarse lunch. Now for the contrasting flavor crumble some cheese like gorgonzola, feta, blue cheese or other strong flavored cheese. The cheese really makes the salad pop. Finally dress it with your own poppy seed dressing.

Poppy Seed Dressing

This is a cooked dressing that will keep in the refrigerator for weeks in a tight jar.

  • 1/4 cup of sugar or equivalent sugar substitute
  • 1/4 cup of cider vinegar
  • 1/2 teaspoon of dried mustard ground
  • 1/4 teaspoon of salt a little can be added later to the salad if wanted
  • 1/4 cup of salad oil
  • 1/2 teaspoon of poppy seeds

In a small pan over medium heat cook sugar, vinegar, salt and mustard until sugar is dissolved. Remove from heat and pour into a blender or use a electric mixer to add oil in a small steady stream.  Then gently stir in poppy seed.  This can be poured into a serving jar to chill before adding to the salad before serving.  It can then be shook before serving after it has been stored.

Summer Salad

  1. Seasonal tender greens
  2. Pecans or Walnuts toasted
  3. Summer fruit like blueberries, strawberries, or other fresh fruit
  4. Sliced mild onion into several slices separated into rings or sliced green onion.
  5. Optional other mild vegetables like fresh peas, carrots, or cauliflower.
  6. Strong flavored cheese crumbled like blue cheese or feta cheese.

Finish off with poppy seed dressing.

The amount you chose depends on how many servings you want. Salad making is more of a art then an actual recipe. This is what makes salads so much fun to do and enjoy because the combinations are endless.

  2. Love Salad Ingredients and the Poppy Seed Dressing recipe. Oh and Momoe, I tried the cucumber dressing on raw sliced Zucchini and it was wonderful too. The vinegar seemed to “pickle” the slices just a bit in the hour or so I chilled them. I’m trying this dressing next as I’ve finally got some home grown lettuce. dru

      I am using it on radishes right now. Pickle them a little to use in salads. I cut them into match sticks first. I thought it would look nice in a toss salad. I will have another salad next week for you.

      Yes me too. I have several more ideas I would like to try. I am finding all kinds of salad dressing on the web. Sometimes it is hard to choose what to try next. It has been a long time since I have bought a bottled dressing because some of these are so good and I go back and make them again.

      Thanks. The bowl is part of a collection of brown drip dishes from the 50’s and 60’s. I thought I would use them more. I am getting better after 5 years trying to photograph food. I find it really hard to stag a good shot. I have been up grading my page and I can really see the improvement from the first ones I did. I still have a lot to do to get everything up graded. If you get a chance take a look at my home page. I think this theme is really nice for food and crafts. You can just skim down the front page and get a quick look. I noticed a couple of other foodies using it and I went a checked out the themes. I found there was no extra charge for it, so I switched.
