Yummy muffins from only 4 ingredients that are eggless. Great quick breakfast idea. It makes 18 muffins or a little more. I used cupcake size pans and liners because I pack them in lunches. You can make them as traditional muffins with out cupcake liners. They are moist and full of flavor.
This is a good recipe if you have a limited budget. Many Food Pantries include yogurt, cake mixes and raisin snacks for their clients. This recipe offers a creative way to use these items. The raisins can be optional if you don’t have them. The muffins are still wonderful. This also make more than the standard recipe for muffins that makes only 12 muffins. This one will make more so you have extra to eat as a snack, lunches or for breakfast. Any flavor of cake mix can be used so what ever you may have on hand. You can also use different flavors of yogurt that you have on hand with white or yellow cake mix.
Egg Less Yogurt Raisin Muffins
- 1 box yellow cake mix
- 1 cup yogurt
- 1 cup water
- 1 cup raisins
- Extra raisins to sprinkle on top
Preheat oven 350 degrees prepare muffin pans.
In a mixer beat the first 3 ingredients until smooth and fluffy. Dust raisins with flour before stirring the raisins into the batter by hand. The flour keeps them from sticking together. Fill muffin cups 3/4 of the way full. Sprinkle a few raisins on top of muffin batter before baking. Bake at 350 degrees for 22 minutes until muffins springs back with touch.
