Strawberry Pie From Fresh Berries

Strawberries are very good for you. They are ranked 5th in antioxidants and 27th best in nutrition in the USA foods.  Antioxidants helps the body to fight inflammation. So if you suffer from gout and other inflammatory conditions, strawberries needs to be added to your diet.  There is a lot of goodness packed in those little fruits.  I am not going to list all the nutrients that they contain because there is a lot and I want to get to the recipes. You can find all that by googling.

This pie is the classic strawberry pie.  In some parts of the country it is known as the Big Boy Strawberry Pie. That was because the Big Boy restaurant chain made it their summer featured pie. That is were I first had it when I was in high school in the early 1960’s. The local paper had this recipe that I am going to share that I saved from when I was in high school. I think this one is the best version of this pie because of the flavor.

The glaze is made with a box of strawberry jello that you can substitute with sugar free jello. Also you can also use splenda instead of sugar.  The 2 tablespoons of light corn syrup just makes it shine.  I just purchase a ready made pie crust for the pie.  I like graham cracker crust. You can make your own if you like to meet your dietary needs.

Fresh Strawberry Pie

  • Servings: 6 servings

Ingredients:

  • 1 pre baked pie shell or graham cracker pie shell
  • 1 cup of sugar
  • 3 tablespoons of cornstarch
  • 1 cup of cold water
  • 2 tablespoons of light corn syrup
  • 1/2 package(3 oz.) strawberry jello
  • 1/2 teaspoon of salt
  • Few drops of red food coloring

Directions:

In a saucepan, blend sugar and cornstarch and add water, mixing until smooth. Add syrup cook over low heat until thick, stirring occasionally. Remove from heat. Add jello all at once and a few drops of red food coloring. Stir to blend. Cool. Cover baked shell or graham cracker pie shell with small amount of glaze. Add prepared strawberries then add rest of the glaze over top.  Chill. Serve with whipped cream.

      This recipe came out of the 1952 edition of the Betty Crocker Cookbook. It is usually called the big red cookbook by collectors. It is the cook book Iearned to cook out of as a kid. This is a great recipe to fill with any fruit.
